=== 🍽🍸🥩 RECIPE ===
4 to 6 bone-in, skin-on chicken thighs
1 tablespoon olive oil
1 medium onion, diced
3 garlic cloves, finely minced
4 to 5 anchovies, roughly chopped
½ teaspoon red-pepper flakes
1 tablespoon tomato paste
1 28-ounce (794g) crushed tomatoes
4 ounces (120ml) dry white or red wine
4 ounces (113g) kalamata olives, roughly chopped
2 tablespoons capers
Salt & Pepper

Preheat your oven to 375°F (190°C).

Heat the oil in a large, oven-proof skillet over medium-high heat. While the oil heats, pat the chicken dry with a paper towel and season with salt and pepper. Once the oil is hot and shimmering, add the chicken, skin side down. Leave undisturbed for 5 to 6 minutes or until nicely browned. Flip and brown the other side of the chicken for another 4 to 5 minutes. Transfer to a plate and set aside.

Lower the heat to medium and add the onion. Cook for 2 to 3 minutes until the onions have started to soften. Add the garlic, anchovies, red pepper flakes and tomato paste. Cook, stirring occasionally, until the garlic is fragrant and the anchovies have melted.

Add the wine to deglaze the pan, scraping up any browned bits on the bottom. Then add the tomatoes, olives and capers. Stir well to combine.

Add the chicken back to the pan, skin side up, and place it in the oven, uncovered, for 30 minutes, or until the chicken reaches an internal temperature of 170°F (76°C).
