1 pork tenderloin, about 12 ounces (340g) each, sliced into half-inch (1.25 cm) thick slices.
8 ounces (226g) all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
½ teaspoon onion powder
½ teaspoon garlic powder
1/2 teaspoon cayenne pepper
2 large eggs
4 ounces (120ml) buttermilk
4 ounces (120ml) olive oil
Pickle chips
Slider rolls

For the sauce:
2-3 tablespoons pickle brine
4 ounces (120ml) Mayonnaise

Start with the sauce. In a bowl, combine the mayonnaise and pickle brine. Mix well to combine.

Heat the oil in a heavy skillet over medium heat until it reaches 350°F (180°C).

While the oil heats, prepare the pork.

Place the flour, salt, pepper, onion powder, garlic powder and cayenne in a wide, shallow dish and mix well.
In a similar dish, combine the eggs and buttermilk. Beat with a fork or whisk until well combined.

Start with the flour. Place a few slices of the pork into the seasoned flour and dredge lightly on both sides. Then dip in the egg mixture, and then dip in the flour again. Place on a platter until all pieces are coated.

Once the oil is hot, fry the pork in batches, 3-4 minutes per side. Place on a paper towel-lined plate. They should reach an internal temperature of 140°F (60°C).

To serve: Place a bit of the sauce on each slider roll. Add a piece of pork. Top with a pickle chip.
