Baked Brie with Cherries and Pistachios – Brie en Croute
Few things in life will stop me in my tracks quite like seeing a Baked Brie in golden pastry. My Baked Brie with Cherries and Pistachio recipe, is oozy, melty, sweet, savory and downright delicious. No baking skills needed for this recipe – the secret is store bought pie crust. Your guests will think you spent hours in the kitchen. We won’t tell them that it only took 15 minutes of prep and just a little bit of oven time.

Ingredients:
1 package of pie crust (2 crusts)
1 small wheel Brie (16 -18 oz.)
Filling:
1/4 cup dried cherries
1/4 cup pistachios, chopped
3 tablespoons brown sugar
2 teaspoons brandy or Cognac (can also use Kirsch)
1 egg beaten with a splash of water
Equipment:
Sheet pan lined with parchment
Pastry brush
Preheat oven to 400 degrees
In a small bowl, combine the cherries, pistachios, brown sugar and Cognac. Stir well to combine.
Unroll one of the crusts. In the center, spread the filling out to about the same size as the wheel of brie.
Place the wheel of brie in the center of the filling, and fold the sides of the crusts up. It probably won’t cover the bottom of the wheel of brie. Brush with the egg wash.
Unroll the second crust. Using the top of the brie container, cut out a circle of crust and place on top of the brie to cover where the first crust didn’t meet. With your fingers, gently crimp the bottom crust to the top. Invert, and place on the center of the sheet pan.
Brush the top crust and sides with the egg wash.
Bake at 400 degrees for 20 to 30 minutes, or until the crust is golden brown. Let rest for 20 before serving.
