Chicken a la King. Is it fancy or is it comfort food? Actually, it’s both. My Chicken a la King over Noodles recipe combines tender chicken in a creamy sauce with mushrooms, bell peppers, pimentos and peas. It makes a dish that is perfect for a casual meal or your fanciest dinner party.

4 ounces (113g) butter
6 ounces (170g) mushrooms, sliced
1 green bell pepper, medium dice
4 ounces (113 g) pimentos
6 ounces (170g) frozen peas
1/2 cup (63g) all purpose flour
2 cups (473 ml) chicken stock
3/4 cup (177ml) heavy cream)
2 large boneless/skinless chicken breasts, cubed
Few dashes of hot sauce (optional)
Salt & Pepper
In a large skillet, melt 2 tablespoons of the butter over medium-high heat. Season the chicken cubes with salt and pepper. Once the butter is melted and hot, brown the chicken cubes. It’s okay if they’re not all the way cooked through. Remove chicken and set aside.
Add the rest of the butter to the same pan. Once melted, add the green pepper and mushrooms, season with salt and pepper. Cook the vegetables for 5 to 7 minutes, or until the mushrooms are browned. Once browned, add the flour to the pan, and mix well. Cook for another 2 minutes to cook out the raw flour taste.
Add the chicken stock to the vegetable mixture and stir well to get all the browned bits off the bottom of the pan.
Add the heavy cream and mix well. Next, add the chicken, frozen peas and pimentos. If desired, add a few dashes of hot sauce. Stir to combine.
Lower the heat and cover. Allow to simmer on low heat for 15 to 20 minutes, stirring occasionally. Taste for seasoning, and serve.
