Corn Chowder – A Creamy Corn Soup With Potatoes and Bacon

Cozy up to a bowl of my thick and hearty homemade corn chowder! This soup is easy to make using fresh or frozen corn, potatoes, bacon and heavy cream. This is a hearty chowder you can make year round.

2 (12 oz/340 g) packs frozen white & yellow corn
*See note if using fresh corn on the cob
4 slices bacon, cut into lardons
1 medium onion, diced
1 red pepper, diced
4 red potatoes (520 g) diced
1 teaspoon dried thyme
1 tablespoon butter
24 ounces (720 ml) chicken or vegetable stock
8 ounces (240 ml) heavy cream
1 tablespoon butter
2 teaspoons corn starch dissolved in 2 tablespoons water
Salt & Pepper
2 tablespoons fresh chives or scallions for garnish
*Note: Cut the kernels from the cobs and place in a bowl. Using the back of your knife, scrape down the cobs and add the milky substance that oozes out of the kernels.

In a pot over medium heat, fry the bacon until crisp. Remove from the pot and set aside. Pour off any excess fat, saving about a tablespoon.

Add the butter, onion, pepper, potatoes, and thyme. Season with salt and pepper. Saute, stirring occasionally until the onions are tender, about 5 to 6 minutes. Add the bacon, corn and the stock, bring to a boil and reduce to a simmer. Cover, and simmer for 10 to 15 minutes, until the potatoes are soft.

Once soft, stir to break up some of the potatoes to help thicken the soup. Add the cornstarch mixture and bring back to a boil until the soup is slightly thickened. Once thickened, remove from the heat and add the cream. Adjust the seasoning if necessary.
