Double Chocolate Pudding Cookies with Walnuts from Scratch

2 1/4 cups (340 g) all purpose flour
1 teaspoon (5 g) baking soda
8 ounces (226 g) unsalted butter, softened
1/4 cup (60 g) granulated sugar
3/4 cup (170 g) brown sugar
1 – 4 ounce (110 g) package instant chocolate pudding mix
1 teaspoon (5 ml) vanilla
2 large eggs
12 ounces (340 g) semi-sweet chocolate chips
1 cup (90 g) chopped walnuts (optional)
Mix flour and baking soda together and set aside.
In a large bowl, combine the butter, sugars, pudding mix and vanilla. Beat until smooth and creamy.
Add eggs one at a time, mixing in thoroughly.
Gradually add the flour mixture. Once combined, stir in the chips and nuts. Batter will be stiff.
Use a level tablespoon (19 g) onto ungreased baking sheets about 2 inches (xx cm) apart.
Bake 375°F (190°C) for 8 to 10 minutes. Makes about six dozen.
