Green Beans Wrapped in Bacon with Lemon Butter Sauce
It’s the holidays once again and that means Aunt Polly’s bean casserole. You liked it when you were a kid, but now you’re all grown up. Start a new tradition with my Green Beans Wrapped in Bacon for your holiday table. The fresh roasted beans adds a sweetness, while the bacon adds a great smoky flavor. A drizzle of lemon butter sauce takes it to that next level.

Equipment: sheet pan with wire rack
1 to 1 1/2 pounds fresh green beans
6-8 thick cut bacon slices
Olive oil
Salt & pepper
For the sauce:
Juice of 1/2 lemon
Zest of 1 lemon
3-4 tablespoons fresh dill, chopped
1 stick butter
Salt & pepper
Preheat your oven to 375 degrees.
Wash and trim both ends from the string beans. Gather a bundle of 6-8 beans, and wrap in bacon. This will use about half of a strip of bacon. Trim the excess, and place seam side down on the wire rack in the sheet pan. Use the bacon you trimmed to wrap the next bundle of beans. This should yield 6 to 8 bundles.
Brush lightly with olive oil, then season with salt and pepper. Roast at 375 degrees for 30 minutes.
In the last 10 minutes of roasting, make the sauce.
In a shallow pan, melt the butter. Add the lemon juice, lemon zest, some salt and pepper. Stir well to combine. Just before serving, add the dill to the sauce. Place the bundles of beans on a platter, and spoon the sauce over the top.
