How to Make Fresh Pasta from Scratch | Your First Homemade Pasta Dough
Whether you’re a kitchen beginner or an experienced cook, making fresh pasta from scratch is a great way to explore new flavors and techniques. I will show you how to make homemade pasta dough step by step, and you will never open a box of dried pasta again.

1 Cup (160g) 00 Flour (Plus more for dusting)
1 Cup (185g) Semolina
3 Extra Large Eggs
1 Tablespoon Extra-Virgin Olive Oil
1/2 Teaspoon Salt
On a clean, flat surface, combine both flours and salt.
Make a well in the flour mixture. Add the eggs and oil.
Using a fork, start mixing the eggs and oil, slowly incorporating the flour as you go being careful not to break the walls of the flour. Continue mixing, adding the flour a little at a time until the mixture forms a dough.
Once the dough is formed, knead by hand for ten minutes, sprinkling the board and dough with more flour as needed.
The dough should be smooth to the touch.
Wrap in plastic and allow to rest for a minimum of thirty minutes or up to 12 hours in the refrigerator.
Once rested, cut the dough into four equal pieces.
If using a pasta machine, follow the instructions on the machine. If rolling by hand, roll each piece out to the desired thickness, and cut into noodles or shapes as desired. Sprinkle the cut pasta with more flour to keep it from sticking together.
Cook in rapidly boiling salted water for 2-3 minutes, depending on the thickness of the pasta. Thicker pasta will take a little longer.
