How to Make Pork Milanese – Italian Pork Cutlets

Tired of the same old pork chops. My Pork Milanese recipe is made with thin pork cutlets that are breaded and shallow fried until they turn into golden, crispy goodness. Add a spinach or an arugula salad and some lemon wedges and you have a hearty meal in just 10 minutes.

4 boneless center cut pork chops
4 large eggs, lightly beaten
Splash of Milk
2 cups (250 g) seasoned breadcrumbs
1/4 cup (25 g) grated parmesan cheese
Olive oil

Place the porkchop in a heavy zip top bag. Pound boneless pork chops with a plastic bag to about 1/2″ (1.25″ cm) thick.

In a wide, shallow dish, mix parmesan cheese with the breadcrumbs.
In another wide, shallow dish, beat the eggs with the splash of milk.

To bread, coat both sides of the cutlet in the breadcrumbs. Dip in the egg wash, then back in the breadcrumbs. Set aside to rest.

Heat 1″ (2.5 cm) of olive oil in a pan to 350° (180C). Fry cutlets 2 – 4 minutes on each side, until golden brown. Don’t overcrowd the pan!
Keep warm in a low oven. Serve hot or room temperature, with a squeeze of lemon and a green salad.
