How to Make Salmon and Vegetable Parchment Packets

6 ounce (170 g) salmon filet
8 whole string beans
6 baby potatoes cut in half
1 shallot thinly sliced
1 clove of garlic, finely minced
1 tablespoon fresh dill, chopped
Lemon slices
2 pats butter
Salt and Pepper
Parchment paper
Sheet pan
Place an oven rack in the lowest position in oven and preheat oven to 400 F (200 C).
Lay the potatoes in the center of the parchment. Then top with string beans, shallots and garlic. Season with salt and pepper. Place a pat of butter on top of the vegetables.
Season the fish filet on both sides with salt and pepper. Place on top of the bed of vegetables. Lay a couple of lemon slices and dill over the fish and top with the other pat of butter.
Fold the parchment up over the fish folding in the edges to seal the fish inside the package. Place on a baking sheet.
Bake for 20 to 25 minutes, or until the fish reaches an internal temperature of 145 F (65 C).
