Orzo Pasta and Mozzarella Salad – An Easy Summer Salad
Pasta salads appear at every barbecue in the summer, but how do you make yours standout from the others. My Orzo Pasta and Mozzarella Salad recipe uses Orzo, a rice shaped pasta, mozzarella balls and fresh herbs. It’s a flavor packed crowd pleaser.

2 cups (350 g) orzo pasta cooked per package directions
1/2 large red onion, diced
4 ounces (135g) Kalamata olives, cut in half
1 pint grape tomatoes, cut in half
3 tablespoons fresh basil, chopped
3 tablespoons flat leaf parsley, chopped
8 ounces (226g) fresh mozzarella pearls
Juice of half a lemon
2 ounces (60 ml) red wine vinegar
4 ounces (120 ml) extra virgin olive oil
Salt & Pepper
In a large pan of salted water, cook 2 cups (350 g) orzo pasta per package directions. Drain and allow to cool in a large bowl. Add the rest of the ingredients, mix well. Chill up to 24 hours before serving.

Diced bell pepper
Diced pepperoni or other salami
Black olives
Pickled hot peppers, diced
