Sausage and Egg Burritos – The One Handed Breakfast

Sausage Egg Burritos are the perfect one handed breakfast when you’re on the go. But on the go doesn’t mean they have to come from a fast food place. The burritos in my recipe can be made in advance, and make breakfast on the go so much better.

10 large flour tortillas
12 large eggs
1 pound (454 g) sausage meat
1 pound (454 g) salsa
8 ounces (226g) shredded sharp cheese

Crumble the sausage meat and cook thoroughly. Remove to a bowl with a slotted spoon and reserve the rendered fat in the pan.

In the same pan, scramble the eggs. Don’t over cook – they will continue to cook even after they’re off the heat.

To assemble:
Place a tortilla on your board. In the center add a small portion of sausage, eggs, cheese and salsa. Starting with the edge closest to you, fold over the ingredients. Then fold in the ends and roll.

Just before serving, heat a skillet and briefly toast the burritos – 10-15 seconds.
Serve with more salsa and cheese.

Other toppings: Guacamole, sour cream
