Shakshuka – Any Time of the Day | Eggs Poached in Flavorful Tomato Sauce
Originating in North Africa and very popular in Middle-Eastern countries, Shakshuka is a simple combination of simmered tomatoes, onions, garlic, spices and gently poached eggs. Served with warmed pita bread, this hearty one pot meal can be served any time of the day.

2 tablespoons (30 ml) olive oil
1 medium onion, diced
1 red bell pepper, diced
4 cloves garlic, finely chopped
2 teaspoons (8 g) smoked paprika
1 teaspoon (2 g) cumin
Large pinch chili powder
1 – 28 ounce (794 g) can of crushed tomatoes
6 large eggs
Salt and pepper
Chopped parsley or cilantro
Optional: Feta Cheese
Heat the olive oil in a large sauté pan on medium heat. Add the peppers and onions and cook down until softened. Add the garlic and spices and cook another minute or two.
Add the tomatoes, season with salt and pepper. Bring to a boil then reduce to a simmer, stirring occasionally. Simmer uncovered until the sauce thickens.
Once thickened, make a small well in the tomato mixture. Crack an egg into each well. Season eggs with a small amount of salt and pepper. Cover and cook for 5 to 8 minutes over medium low heat, or until the eggs are done to your liking.
Garnish with chopped cilantro or parsley.
Optional: Add small crumbles of Feta cheese.
