Shaved Brussels Sprouts Salad and Apple Salad with Cranberries

If you’re tired of the same old lettuce salad, try my Brussels sprouts and apple salad. Hearty enough to be a meal, it uses apples and cranberries to provide sweetness and crunch, and a mustardy vinaigrette gives that perfect zing.

4 ounces (120 ml) extra virgin olive oil
2 ounces (60 ml) apple cider vinegar
Juice of 1 lemon
4 tablespoons Dijon mustard
1 tablespoon honey
Salt and Pepper

1 pound (454 g) Brussels sprouts
1 Granny Smith apple, unpeeled, cored and diced
6 ounces (170 g) dried cranberries
1 cup (30g) finely chopped fresh parsley

In a large bowl, combine the olive oil, vinegar, lemon juice, mustard, honey, salt and pepper. Whisk well.

To shave the Brussels sprouts, use a food processor fitted with the slicing blade, or a very sharp knife.
Add the shaved Brussels sprouts, cranberries, apples and parsley to the bowl with the dressing. Mix well. Cover with plastic wrap and refrigerate for 30 minutes. Taste for seasoning and add more salt & pepper if needed.
