16 ounces (454g) cream cheese, softened
16 ounces (474g) mayonnaise
1 small onion, finely diced
4 garlic cloves, finely minced.
1 jar (7 ounces/198g) sun dried tomatoes in oil, drained and chopped
4 ounces (113g) roasted red peppers, drained and chopped
8 ounces (226g) shredded mozzarella cheese
8 ounces (226g) shredded Italian cheese blend
4 ounces (113g) shredded Parmesan cheese, divided
In a large bowl, combine the cream cheese, mayonnaise, onion and garlic. Mix until well combined. Stir in the tomatoes and red peppers, mozzarella, Italian cheese blend and half of the parmesan. Stir to combine.
Transfer mixture to a greased 13×9 (33x22cm) baking dish. Sprinkle with the remaining parmesan cheese.
Bake uncovered at 350°F (180°C) for 18 to 22 minutes, or until the edges are bubbly and the top is lightly browned. Let rest for 20 minutes. Serve with crackers.
