Chicken Scarpariello: An Italian-American Classic with a Kick of Heat
Chicken Scarpariello, also known as shoemaker’s chicken, is a classic Italian-American dish of chicken, sausage, vinegar, onions and peppers that has all the flavors and textures: Tangy and rich, spicy and sweet, tender and crunchy.

4 chicken thighs, trimmed of excess fat
1 tablespoon vegetable oil
8 ounces (225 g) sweet Italian sausage, casings removed or loose
1 onion, halved and sliced thin
1 red bell pepper, stemmed, seeded and sliced thin
1/4 cup (40 g) pickled sliced hot cherry peppers, plus 2 tablespoons brine
5 garlic cloves, minced
1 teaspoon dried oregano
1 tablespoon all-purpose flour
6 ounces (177 ml) chicken stock
2 tablespoons chopped fresh parsley
Salt & Pepper
Preheat oven to 350° F (180°C).
In a large skillet, heat the oil over medium-high heat until just smoking. Season chicken with salt and pepper, then add to the skillet, skin side down and cook until browned, about 5 minutes. Continue to cook and brown on all sides. Transfer to a plate.
Add the sausage and cook until browned. Transfer sausage to a paper towel lined plate.
Pour off all but 1 tablespoon of the fat. Return to heat. Add the onion and the bell pepper. Cook until vegetables are softened and lightly browned, about 5 minutes.
Add the cherry peppers, garlic and oregano and cook until fragrant. Stir in the flour and cook for another 30 seconds to a minute to cook off the raw flour taste.
Add broth and cherry pepper bring and bring to a simmer, scraping up any browned bits.
Remove from the heat and stir in the sausage. Place the chicken, skin side up, in a single layer. Add any accumulated juices. Place in the oven and cook until thighs reach 175° F (80°C) About 20 to 25 Minutes.
Carefully remove the skillet from the oven. Transfer the chicken to a serving platter. Season vegetable mixture with salt and pepper to taste, then spoon over the chicken. Sprinkle with chopped parsley. Serve immediately.
