32 ounces (914g) packages frozen broccoli florets
1 14-ounce (408g) package frozen pearl onions
4 tablespoons butter
4 tablespoons all-purpose flour
16 ounces (473ml) milk
6 ounces (170g) cream cheese, cubed
8 ounces (226g) shredded cheddar
Salt & Pepper

Preheat oven to 350°F (180°C).

Cook the broccoli and onions in an inch (2 cm) of water until just al dente.
Drain and transfer to a greased 9 x 13-inch (22 x 33 cm) baking dish.

In a large saucepan, melt the butter over medium heat. Add the flour and whisk until combined, making a roux. Cook for 1 – 2 minutes to cook off the raw flour taste. Then, slowly whisk in the milk. Cook, whisking continuously until thickened, season with salt and pepper. Reduce the heat and stir in the cream cheese until combined.

Pour over the vegetables. Then sprinkle the shredded cheddar on top.

Bake uncovered until topping is golden brown, 25-30 minutes.
