=== 🍽🍸🥩 RECIPE ===
4 bone-in, skin-on chicken thighs, trimmed of excess skin and fat
1 tablespoon olive oil
2 tablespoons unsalted butter
2 medium apples, cut into 1/2 inch (1.25cm) slices
1 medium onion, sliced
1 ½ teaspoons dried thyme (can use fresh)
4 ounces (120ml) Apple Cider
2 ounces (60ml) white wine
4 ounces (120ml) chicken stock (if needed)
Salt & Pepper
Instructions:
Pat the chicken thighs dry and season generously on both sides with salt and pepper.
Heat large skillet over medium-high heat. Add the olive oil and butter. Swirl the pan to combine them both. Once the fat is shimmering and there are whisps of smoke, add the chicken, skin side down. Cook until golden, about 5 to 7 minutes per side. Remove to a platter.
Lower the heat to medium. Add the onions and cook, stirring occasionally, until they are softened and are starting to brown. Then add the apples, thyme, and another pinch of salt and pepper. Stir well to combine and cook until the apples have begun to soften, about 5 minutes.
Add the white wine and apple cider to the pan to deglaze. Add the chicken to the pan, nestling among the apple-onion mixture. Cover and cook for an additional 10-15 minutes, or until the chicken reaches an internal temperature of 180°F (82°C). Keep an eye on the liquid, and add more if needed.
