Hearty And Delicious Chicken And Butternut Squash Soup with Kale

Experience autumn’s harmony in a bowl with my Chicken and Butternut Squash Soup with Kale. This hearty one pot meal combines butternut squash, beans, chicken, and earthy kale in a delightful fusion of flavors and can be ready to eat in less than 30 minutes.

=== 🍽🍸🥩 RECIPE ===
1 medium Butternut Squash, peeled and diced
1 red onion, diced
2 cloves garlic, minced
1 bunch Kale, stripped from the stem, roughly chopped
2 15 ounces (425g) cans of white beans/cannellini beans
2 tablespoons tomato paste
64 ounces (about 2 liters) chicken stock
3 boneless, skinless chicken breasts, cut into bitesize pieces (or use 1 rotisserie chicken)
2 tablespoons olive oil
Salt & Pepper

Heat the oil in a large Dutch oven over medium heat. Add the onions, garlic and squash. Season with salt and pepper. Cook for 3 to 4 minutes, stirring frequently, until fragrant and the onions start to soften. Then stir in the tomato paste and cook for another 2 to 3 minutes.

Add in the chicken and stir to combine. Then, add the beans and the liquid from their cans, the stock, and kale. Stir well and cover. Bring to a boil and then reduce to a simmer. Let the soup simmer for 20 to 30 minutes, stirring occasionally, until the squash and kale are softened and the chicken is cooked through and tender.
