Lamb Chili | The Chili Upgrade You Didn’t Know You Needed

If you love chili but want a deeper, richer flavor, lamb might be the upgrade you’ve been missing. This lamb chili is bold, cozy, and incredibly flavorful—without being fussy or complicated.

If you’ve never cooked with lamb before, this is a great place to start. It’s approachable, comforting, and perfect for weeknights, game days, or anytime you want a pot of chili that tastes like you tried a little harder (even if you didn’t).

We’ll walk through why lamb works so well in chili, how easy it is to cook, and how to build big flavor without overthinking it.

=== 🍽🍸🥩 RECIPE ===
2 pounds (907g) ground lamb
1 tablespoon olive oil
1 onion, diced
2 ribs of celery, sliced
3 cloves garlic, minced
1 15-ounce (411g) can fire-roasted tomatoes
2 15-ounce (425g) red kidney beans, drained
1 tablespoon tomato paste
1 teaspoon garlic powder
2 teaspoons smoked paprika
1 teaspoon chipotle chili powder

In a large Dutch oven, heat the oil over medium-high heat. Add the ground lamb and a healthy pinch of salt and pepper to brown the meat. Once cooked, remove with a slotted spoon and reserve.

In the same pan, using the fat from the ground beef, add the onions and celery, along with a pinch of salt and pepper. Cook for 4 to 5 minutes, until softened. Add the garlic and cook for an additional 2 to 3 minutes, stirring frequently. Add the tomato paste, garlic powder, paprika, and chili powder, and cook for another 2 to 3 minutes. Add meat, tomatoes, and beans to the pan. Stir well to combine. Simmer covered for at least 30 minutes, tasting and adjusting the seasoning throughout.

*Note: if chili is too dry, add 1/4 to 1/2 cup of beef or chicken stock.
