Zucchini Rollup Roses with Bacon & Cheese | The Best Way to Eat Your Veggies !

It’s that time of year where everyone’s garden has more zucchini than they know what to do with. My zucchini rollup roses are a great mixture of flavors using zucchini, bacon, cheeses and herbs all in a pretty package.

=== 🍽🍸🥩 RECIPE ===
1 medium to large zucchini
1 medium to large yellow squash
6 strips of bacon
4 ounces (113 g) softened cream cheese
2 ounces (56 g) shredded cheese
1/2 teaspoon ground Italian seasoning (Big Pinch)
1 teaspoon dried marjoram
2 tablespoons (30 ml) olive oil
Salt & Pepper

In a small bowl, combine the cream cheese and Italian seasoning. Mix well to combine.

In another small bowl combine the olive oil, marjoram, salt & pepper. Mix well to combine.

Trim the tops and bottoms off the squash and zucchini. Using a mandolin or a vegetable peeler, slice lengthwise a little thicker than 1/16th of an inch (2 mm).

Lay out 4 to 5 slices of the squash, alternating colors.

On the first slice, spread a teaspoon of the cream cheese evenly. Top with a slice of bacon.

Sprinkle the remaining slices with some of the shredded cheese.

Starting with the slice with the bacon, roll into a coil. Place that piece onto one with the shredded cheese, wrapping it around the piece with the bacon, being careful to keep the layers even. Continue until all pieces are wrapped.

Place each rose into a muffin tin then lightly brush the tops with the herbed olive oil.

Roast at 350°F (180°C) for 20 minutes so the bacon cooks.
