4 eggs
Splash of milk
1 tablespoon butter
Salt & Pepper
Wire whisk
Rubber spatula
Non-stick pan
Crack the eggs into a large bowl. Add the splash of milk, and season with salt. Whisk together until combined well.
In a nonstick pan, melt the butter over medium low heat, tipping the pan to coat the bottom. Add the beaten eggs and drag the spatula through the eggs to move any that have set. Continue until all the eggs are just solid but still slightly wet. Quickly move to a plate and serve immediately – remember the eggs will continue to cook until served.
