One Pan Mediterranean Fish Dinner – The Ultimate Tray Bake

Get ready to tantalize your taste buds with this One Pan Mediterranean Fish Dinner! With a burst of flavors from fresh herbs, oranges, juicy tomatoes, and tender fish, this dish is sure to impress. === 🍽🍸🥩 RECIPE ===
1 Tablespoon Olive Oil
1 14 oz (240 g) can Artichoke Hearts, drained (can use frozen)
1 Pint (300 g) Cherry Tomatoes
1/2 cup (65 g) Pitted Olives, halved
1 Green Bell Pepper, cut into strips
4 Cloves Garlic, crushed
1 Tablespoon Fennel Seed
2 Tablespoons Capers, drained
4 ounces (120ml) Orange Juice
Zest of 1 Medium Orange
1 1/2 Pounds (650 g) Cod, cut into 4 or 6 portions
Salt & Pepper

Heat oven to 450°F (230°C).

Add the olive oil to a large roasting pan and coat the bottom of the pan.

Arrange the artichoke hearts, tomatoes, olives, bell pepper, garlic and fennel seeds in the pan.

Place the fish on top of the vegetables. Top the fish with orange juice, orange zest, capers, salt & pepper.

Bake 25-30 minutes, or until vegetables are tender and the fish flakes easily with a fork.
