Painted Green Pasta with Kale Sauce
Tired of pasta with red sauce? Bold in color and flavor, kale is the secret to this quick and easy one pot meal. Vibrant green, fresh, light and delicious, this green sauce will make any type of pasta a new treat.
1 pound Dinosaur Kale a.k.a. Black Kale, rinsed and trimmed of tough stems.
4 to 5 cloves garlic, peeled
1 pound spaghetti (Note: You can use whatever pasta you like)
4-6 quarts boiling, salted water
2-3 tablespoons extra virgin olive oil
Salt & Pepper
In a large Dutch oven or stock pot, bring the water to a full, rolling boil.
Add garlic and pasta, cook per package directions
Half way through cooking, add the kale to the water. Cook kale for 5 to 7 minutes.
Remove kale and garlic from the water, put In food processor, along with a cup of the pasta water and olive oil. Process until liquified. Taste for seasoning and set aside.
Drain the pasta, put back in the pot. Add the green sauce and stir to combine.
Optional additions: crumbled sausage, hot pepper flakes, roasted garlic, parmesan cheese.
