Dates Stuffed with Blue Cheese

Sometimes the best appetizers are the simple ones. These savory Dates Stuffed with Blue Cheese only take two ingredients to make. Dried dates have a chewy texture and sweet taste with a hint of caramel, but there’s no sugar added. Pair them with blue cheese and get salty, sweet, and creamy. Then just watch them disappear.

10 ounces pitted dates
6 ounces blue cheese
Small sharp knife

With the sharp knife, cut the dates in half length wise.
Stuff 1/2 with some of the blue cheese.
Place the other half on top.

To make creepy for Halloween, split on half of the date part way to resemble wings.

Alternative #1: To make the filling a little heartier combine:
4 ounces softened cream cheese
2 ounces crumbled blue cheese
2 table spoons mayonnaise
1/4 cup chopped toasted pecans

Alternative #2: Stuff with Goat Cheese
