Shrimp and Tator Tot Skewers | A Guilty Pleasure
Ever have one of those guilty pleasures you are afraid to admit? I have two of them – tater tots and food on a stick. Let’s have some fun with both of those, and make my Shrimp and Tator Tot Skewers.

2 pound (908g) shrimp (size 16-20), peeled and deveined
1 package tator tots
1 tablespoon (12g) Old Bay seasoning
1 stick butter (113g)
Limes, cut into small pieces
Bamboo skewers
Pastry brush
Chopped Parsley or Cilantro
Place the tator tots on a sheet pan, and dust with Old Bay seasoning. Bake per the package directions plus a few minutes more for an extra crisp. When the tator tots are done, set the temperature to 400° F (200° C)
After the tator tots are baked and cooled, melt the butter with the tablespoon of Old Bay and whisk to combine.
On a skewer, thread 2 tator tots, then a shrimp. Follow with 2 more tator tots, then another shrimp, then 2 more tator tots, finish with shrimp. Place the skewer back on the sheet pan on a wire rack and brush each shrimp with the melted butter. Bake at 400°F / 200° C degrees for about 10 minutes until the shrimp are cooked and the tator tots are extra crispy.
Before serving, top off the skewer with a piece of lime, garnish with parsley or cilantro. Serve immediately.
