Spicy Tuna Tartare on Baked Wonton Chips

8 ounces (226 g) sushi grade tuna, diced (keep it very cold, or partially frozen to help it dice)
3 tablespoons chopped scallions (green part only)
3 tablespoons toasted pine nuts
1 tablespoon plus 1 teaspoon soy sauce
1 tablespoon toasted sesame oil
1 1/2 teaspoons jalapeno, chopped
1 tablespoon grated fresh ginger
Package of fresh wonton wrappers
For the wontons:
Preheat oven to 350F (180C)
Brush 1 tablespoon vegetable oil on a baking sheet.
Lay out 12 wonton wrappers
Bake 8 to 10 minutes. Let cool.
Combine all ingredients in a bowl. Mix well and serve on the baked wonton wrappers immediately.
Other serving options: crackers, cucumber slices
Wontons can be baked up to 3 days in advance and stored in an airtight container. The tuna can be diced up 12 hours in advanced and refrigerated.
