Easy Cast Iron Skillet Steak with Herb Butter
It seems that only steak houses know how to get that perfect sear on a steak. My Cast Iron Skillet Steak and Herb Butter recipe will show you the technique to get a flavorful and juicy seared steak. All you need is your oven and a cast iron skillet.
The cast iron skillet gets the perfect sear and the high temperature cooks the steak in a short amount of time. The resting time will bring the steak up to its final temperature while melting the herb butter to flavor the steak.

2 boneless NY strip steaks
Salt & Pepper
4 ounces (113g) softened butter
2 cloves garlic, finely minced or use a garlic press
2 tablespoons fresh parsley, finely chopped
2 tablespoons vegetable oil
Instant read thermometer
Timer
Place your skillet in the oven and heat to 500° F (260°C).
While the oven heats, pat the steaks dry, season with salt and pepper, and allow to rest.
Next, in a small bowl, combine butter, garlic, parsley, salt, and pepper. Mix well to combine.
Once the oven is ready, carefully remove the skillet and place it on the stove over medium-high heat. Add the oil and heat until just smoking.
Add the steaks and cook until browned on the first side for precisely 2 minutes. Flip over and cook the other side for another two minutes. Check the temperature, looking for 120 to 125 (49 to 53C) for medium rare. If needed, reduce the heat to medium and repeat, flipping the steaks every two minutes until you reach the desired temperature. It could take 8 to 10 minutes if the steaks are very thick.
Remove from pan and dollop 2 tablespoons of the herb butter on top. Tent loosely with foil and let rest for 5 to 10 minutes before serving.
Note: Other additions to the butter: chopped shallots or chives, 1 tablespoon whole grain mustard, crumbled blue cheese
