These Crispy Bacon Grits Bites Are Secretly Easy

These crispy bacon grits bites are secretly easy — cheesy, roasted-garlic grits baked in a mini muffin tin, topped with crispy bacon. The perfect make-ahead appetizer that looks like you worked for hours when you really didn’t. That’s the whole point.

INGREDIENTS
16 ounces (473ml) milk
1/4 cup (125g) quick cooking grits
2 heads roasted garlic
4 ounces (113g) shredded sharp cheddar
6 slices bacon cooked crisp
Salt & pepper to taste
Mini muffin tin
Cooking spray

METHOD
1. Preheat oven to 350°F (180°C). Spray a mini muffin tin with cooking spray.
2. In a large saucepan, bring the milk to a boil. Slowly stir in the grits. Season with salt & pepper.
3. Reduce heat to medium-low and cook until thickened, stirring occasionally.
4. Once thickened, stir in the roasted garlic and sharp cheddar.
5. Spoon 1 tablespoon of the mixture into each muffin cup.
6. Bake until heated through, 15–20 minutes.
7. While the grits bake, cook 6 slices of bacon until crispy
8. Top with crispy bacon pieces, cool 5 minutes, and remove from the tin. Serve warm.

That’s it — 25 minutes and you’ve got a party appetizer nobody will believe was easy.
