Cucumber Summer Salads – Sour Cream and Dill or Cucumber Vinaigrette
I don’t know if there’s any salad that says Summer more than a simple cucumber salad. The flavors of dill and onion join the cucumbers in two different versions – one is crisp and bright in a vinaigrette while the other uses sour cream to make a rich and elegant side dish.

—- Cucumber Salad with Vinaigrette
3 cucumbers, peeled and sliced thin (Note: if using English cucumbers, you don’t have to peel them)
1 medium onion, sliced thin
1/2 cup (15 g) chopped fresh dill (or 2 tablespoon dried dill)
2/3 cup (160 ml) red wine vinegar
1/3 cup (80 ml) olive oil
Healthy pinch sugar
Salt & Pepper
In a large bowl, combine cucumbers, onions, dill, sugar, salt and pepper. Toss to combine.
Add oil and vinegar and toss to combine. Cover tightly and refrigerate for 2 to 4 hours, or overnight.

8 oz. (250 g) sour cream
1 oz. (30 ml) milk
Juice of 1/2 lemon

In a bowl, combine the sour cream, dill, milk, lemon juice and a pinch of salt. Stir to combine.
In another bowl, combine the cucumber, onion, salt & pepper. Add dressing, stir to combine.
Cover tightly and refrigerate for 2 to 4 hours or overnight.
