1 pound (450 g) chicken cutlets
1 tablespoon extra-virgin olive oil
1 medium onion, finely diced
1/2 cup (120 ml) dry white wine
1/2 cup (120 ml) heavy cream
1/4 cup (60 g) pesto
1 medium plum tomato, diced
Juice 1/2 lemon
2 tablespoons roughly chopped basil
Salt & Pepper
Season the chicken with salt and pepper.
Heat the oil in a large skillet over medium high heat until the oil shimmers.
Add the chicken to the pan and cook, turning once, until browned and cooked through. Transfer to a plate.
Add the onion to the same pan and cook for 1 to 2 minutes to soften.
Add the wine to the pan and cook, scraping up any browned bits from the bottom of the pan. Cook until the liquid is almost evaporated. Reduce the heat, and add the cream and . Season with a more salt and pepper and simmer for 2 to 3 minutes.
Add the tomatoes and pesto and any of the chicken juices from the plate to the pan. Stir to combine and then add the chicken. Turn to coat. Simmer for another minute to warm the chicken through.
