Apricot Butter Cookies – the Perfect Adult Ice Cream Sandwich
Milk and cookies may be for kids, but my Apricot Butter Cookies are for the adults. Easy to make even for non-bakers like me. 1 cup softened butter (225 gr)
3/4 cup powdered sugar (115 gr)
1 teaspoon vanilla extract (5 ml)
1 1/2 cup all purpose flour (193 gr)
1/4 cup finely chopped dried apricots (35 gr)
Preheat your oven to 350° F (177° C)
In a large bowl, combine the butter, sugar and vanilla.
Beat with an electric mixer until smooth.
Add in the flour in parts, and mix to combine.
Once the flour is incorporated, add the apricots. Mix until just combined.
Shape the dough into 1 inch balls. (A small ice cream scoop works the best, or use a measuring spoon.)
Place the dough 2 inches apart on an ungreased cookie sheet.
Bake for 8 to 12 minutes or until the bottoms are light golden brown.
Cool for 1 minute, then remove from the cookie sheet onto a cooling rack. Cool for another 30 minutes.
