1 cup Pearl Couscous, cooked per package
Bell pepper, medium dice
1 onion, medium dice
2-3 cloves garlic, chopped
Fresh parsley, chopped
Grape tomatoes, quartered
Kalamata or Greek olives, pitted, quartered
Olive oil to sauté vegetables
Extra virgin olive oil
Red wine vinegar
Sauté onions, peppers, garlic in the olive oil until just tender. Set aside to cool.
In large bowl, combine cooked Couscous, sautéed vegetables, olives, tomatoes, salt, pepper, fresh parsley, extra virgin olive oil and red wine vinegar. Stir to combine; serve room temperature or chilled.
