Easy Creamy Scalloped Potatoes – Throw Away the Boxed Stuff !
Are you tired of boring mashed potatoes? Then you’re in for a treat – Let’s make creamy, easy, and delicious scalloped potatoes from scratch. Fear not – although it looks like a complicated dish, it is actually very easy to make.
=== 🍽🍸🥩 RECIPE ===
3 lbs. (1.25kg) Yukon Gold potatoes, sliced thin (1/8 inch or 3mm)
1 large onion, sliced
3 tablespoons chives, chopped
2 sticks butter (226g) plus 2 tablespoons for pan
16 tablespoons (130g) flour
32 ounces (950ml) whole milk
1 teaspoon grated nutmeg
Salt & Pepper
Preheat oven to 375°F (190°C).
Grease a 9 x 13 (23cm by 33cm) baking pan with 2 tablespoons of butter.
Prepare the vegetables:
If using a mandolin, set the thickness to 1/8 inch (3mm) and slice the potatoes.
Using a chef’s knife, slice the onion into half-moons and chop the chives.
Make the Bechamel:
In a saucepan, melt the butter over medium-low heat. Add the flour and stir with the whisk until combined. Cook for 30 seconds to a minute to cook off the raw flour taste. Slowly add the milk, stirring constantly. Season with salt, pepper, and nutmeg. Continue to stir until slightly thickened. If it gets too thick, add more milk until the desired consistency. Turn off the heat when the desired thickness is reached.
In the baking pan, place a layer of potatoes, then onions, chives, salt & pepper, and some of the sauce. Repeat until the dish is full, with the final layer being the sauce and a sprinkling of chives, if any are left over. It should be 3 or 4 layers.
Cover with foil and bake for 1 hour. Remove foil and bake for another 30 to 45 minutes or until the top is golden and the potatoes are cooked through. Remove from oven and allow to rest for 15 to 20 minutes before serving.
