Kale Soup with Beef

This wonderful soup will warm you up on a cold winter night, it is my family recipe for Kale Soup. There are many type of kale soup, from vegan, to potato, to vegetable, to Portuguese, and still others with beans, potatoes and sausage. My Kale soup is filled with dark green kale, onions, garlic and beef. With the super power of kale, and only two tablespoons of olive oil in this recipe, not only is it good for you, its good for your waistline. Its not a quick soup to make, but one you will eating for days.

It can be a appetizer for dinner, or just add some crusty bread and a glass of wine, and it is a meal in itself.

Kale Soup with Beef Recipe

1 pound beef (chuck) cubed
1 pound kale, washed, roughly chopped
1 large onion, med dice
2-3 cloves garlic, chopped
4 quarts beef stock
2 tbsp. olive oil
Salt & pepper

In a large stock pot, heat up the oil.

Season the beef with salt and pepper and brown in the oil.
Add the onions and garlic to the pot. Add the kale in batches, and season with
Salt in between each batch. Slowly add the stock.

Cover, bring to a boil and reduce to a simmer. Allow to simmer for 2 -3 hours, or until the kale is tender. Allow to cool slightly.

Drain the kale and beef, save the broth. In a food processor, chop the beef and vegetables to a coarse paste. (Don’t puree!) Add back to the broth. Taste for seasoning and serve.

Serve with horseradish or hot sauce and crusty bread!
