Pan Fried Potato Cakes – Use Up Those Leftover Mashed Potatoes

What do you do with a big bowl of leftover mashed potatoes? You do what I do and make pan fried potato cakes and have a plate full of golden fried deliciousness.

=== 🍽🍸🥩 RECIPE ===
12 ounces (340 g) cold mashed potatoes
1 large egg
1 ounce (28 g) instant mashed potato flakes
2 scallions, chopped
Salt & Pepper
Vegetable oil

Breading:
2 large eggs, beaten
1 cup (125 g) Seasoned breadcrumbs

Preheat oven to 325 F (165 c)

In a large bowl, combine the mashed potatoes, egg, potato flakes, scallion and salt and pepper. Mix well to combine.

Form mixture into 4 equal patties. Dip each patty into the breadcrumbs, then the eggs, then back in the bread crumbs. Set aside.

Add 1/2 inch (1.25 cm) to a large skillet and heat to 325 degrees (165 c). Fry the patties until golden brown on both sides. Drain on wire rack in a sheet pan. Place in warm oven for 15 minutes.

Serve with more chopped scallions and sour cream.
