These Roasted Garlic Smashed Potatoes Will Make Your Mouth Water!

My Roasted Garlic Smashed Potatoes are a harmonious blend of crispy edges, velvety soft centers, and an irresistible garlic butter infusion. Get ready to fall in love with potatoes all over again.

How to Make Roasted Garlic –

=== 🍽🍸🥩 RECIPE ===
1 1/2 pounds (680g) baby potatoes.
Olive oil
8 tablespoons (113g) salted butter
2 heads roasted garlic
1 tablespoon chopped parsley

Place the potatoes in a large pan and add enough water to cover them by one inch (2.5cm). Bring to a boil and then reduce to a simmer. Cook until the potatoes are soft enough for a toothpick to be inserted without any resistance.

While the potatoes cook, melt the butter and add the 2 heads of roasted garlic. Using a stick blender, mix well to combine. Add the parsley and stir gently to combine.

Preheat the oven to 475° F (245°C)

Once the potatoes are cooked, drain and place on a large sheet tray and allow to cool. Once cooled, smash into patties with the bottom of a small glass. Once smashed, drizzle lightly with olive oil. Place in the oven, and roast for 25 to 30 minutes or until crispy and golden.

Remove from the pan to a large bowl. Pour the garlic butter over and toss gently. Serve immediately.
