Grilled Watermelon Salad with Balsamic and Feta

Have you ever thought of grilling watermelon to make a summer salad. Grilled Watermelon Salad with Balsamic and Feta Cheese is a bright treat from the sharp peppery taste of Arugula with the saltiness of Feta Cheese and extra sweetness of the caramelized watermelon from the grilling process. You can use this same recipe with peaches, pears, honeydew, nectarines and cantaloupe.

Pre-packaged watermelon slices or cut your own watermelon sliced into planks
Arugula
Feta cheese chunk (plain)
4 oz. of balsamic vinegar
Cooking spray

Pour 4 oz. of balsamic vinegar in a saucepan, reduce the vinegar by 1/2 by bringing it to a boil then reducing the heat to a simmer until it is thick and syrupy. Set aside to cool.

Dice the feta into small cubes and place them on top of a layer of arugula greens on a plate. Set aside.

On a preheated grill on the highest setting, lightly oil the grill grates with cooking spray on a wad of paper towels or a kitchen towel. towel. Place watermelon slices on the hot grill. Grill 30-45 seconds, just enough to get sear marks. Flip the slices, and grill for another 30-45 seconds. Remove from grill.

Add 1 or 2 pieces of watermelon (depending on the size) to the salad. Drizzle with balsamic reduction syrup. Serve immediately.
