Grilled Watermelon Salad with Balsamic and Feta
Have you ever thought of grilling watermelon to make a summer salad. Grilled Watermelon Salad with Balsamic and Feta Cheese is a bright treat from the sharp peppery taste of Arugula with the saltiness of Feta Cheese and extra sweetness of the caramelized watermelon from the grilling process. Pre-packaged watermelon slices or cut your own watermelon sliced into planks
Feta cheese chunk (plain)
4 oz. of balsamic vinegar
Pour 4 oz. of balsamic vinegar in a saucepan, reduce the vinegar by 1/2 by bringing it to a boil then reducing the heat to a simmer until it is thick and syrupy. Set aside to cool.
Dice the feta into small cubes and place them on top of a layer of arugula greens on a plate. Set aside.
On a preheated grill on the highest setting, lightly oil the grill grates with cooking spray on a wad of paper towels or a kitchen towel. towel. Place watermelon slices on the hot grill.
