Spring Pea Salad with Mint and Feta | A Fresh and Flavorful Side Dish

You probably only have peas from a bag in the freezer as a vegetable with your dinner. My Spring Pea Salad uses fresh Snap Peas, a flavor of Spring, combined with other fresh veggies for some great crunch. Adding mint and a sharp vinaigrette to a dish you will have you making it all year round.

Spring Mix (enough to cover platter)
6 – 8 radishes sliced thin
8 ounces (250 g) blanched sugar snap peas, sliced in half
6 ounces (130 g) frozen green peas, thawed
1/2 English cucumber, sliced
8-10 Mint leaves, roughly chopped
6 ounces (170 g) feta cheese, crumbled

Vinaigrette:
Grated zest of 1 lemon
2 ounces (60 ml) fresh lemon juice
1 Tablespoon (15 ml) red wine vinegar
1 medium shallot, finely diced
2 ounces (60 ml) extra-virgin olive oil
Kosher salt and freshly ground pepper
