Stuffed Mini Sweet Peppers Recipe

12 mini sweet peppers, cut in half length wise, deseeded
4 oz. goat cheese
1 teaspoon garlic powder
1/2 teaspoon dried thyme
1 teaspoon chopped parsley (or chives)
1 or 2 tablespoons of half and half
Salt & pepper (to taste)

In a bowl, combine room temperature cheese, garlic powder, milk, herbs, salt & pepper. Mix well.

With a small spoon or spatula, stuff the peppers with the cheese mixture.

Optional: After the peppers are stuffed, place under the broiler until browned and warmed through.

Before serving, drizzle with olive oil and garnish with more chopped parsley. Can be served, hot or cold.
